Fruit in the Forecast: The Challenge (and Upside) of Planning Ahead
Whether using whole fruit or purees, breweries benefit by estimating their needs in advance.
In late June, Fonta Flora employees planned to buy 1,500 pounds of blueberries from a farmer located less than five miles from the brewery in Nebo, North Carolina. On the morning of the scheduled pick-up, however, Fonta Flora cofounder Todd Boera received an alarming text from the farmer. It read: “Bad news. ... Hail last week knocked off half our berries. Use another source for berries. Sorry.”
